Today, we don’t talk about Bar anymore but about Mixology. As the clubbing became an institution the bar started to have its own culture at the end of the 90’s. At that time, the range of cocktails available was limited and only the standard cocktails existed (Mojito, Cosmopolitan etc). Then, the bartending was made according to the rigours of the art, with professional bartenders motivated by a real desire to promote the Bar to the rank of institution.More and more the cocktail popularity happened to increase, the cocktail itself became trendy with aromas and essences from all over the world. Lounge bars such as Bar Rouge have played a major role in this new status. Today the bartenders are real creators called mixologists.
